You guys. I can’t believe I missed yesterday’s post! How is it that our days at home go by so slowly yet so quickly at the same time? I decided to take on the challenge of going through my clothes and it was a whole ordeal. I ended up wearing a flower crown and pretending to be Carole Baskin. Can’t win em all I guess.
I’m still not done with my closet but that’s okay. I’ll save it for another day. The sun is shining and I can’t wait to get outside! It’s been rainy and gross here every day this week and I can’t wait to get some Vitamin D!
But before I bundle up and head out for a walk, I wanted to hop on and share a few easy dinner ideas with you! For me, while I’ve had so much more time to cook these past two weeks, we struggle to find recipes that we don’t need to make a trip to the store to make.
So we’ve been trying to get creative and make recipes that are only 5 ingredients (minus olive oil and spices!), and healthy-ish. And so far? All have been freakin’ amazing! Some are our own recipes, and some we’ve gotten from others. But I can promise, you and your loved ones will be huge fans of any of these dinner!
Sweet Potato Chili
I’m starting out with our new favorite meal! One of my favorite bloggers, Southern Curls and Pearls posted this simple recipe on her Instagram stories the other day, and we made it last night. It was SO YUMMY. We want to eat it every night. HAHA Here’s what you’ll need…
- 1 Onion
- Sweet Potatoes (Cubed. We used 2!)
- 1 Jar of Chunky Salsa
- 1 Can of Black Beans (I don’t like Black Beans so we used Pinto!)
- 2 Cups Vegetable Stock
- 1 Tablespoon Olive Oil and Your Favorite Spices (We used Cumin, Chili Powder, Cinnamon, Salt and Pepper!)
In a large pot over medium heat, cook onions in olive oil until translucent. Add sweet potato and any spices you want and cook for three minutes. Add the entire jar of salsa and two cups of vegetable stock to the pot and bring to a boil. Once boiling, lower heat to medium-low and add beans. (I drained mine.) Cover and simmer for 20 to 30 minutes or until the sweet potatoes are tender. Serve up in a big bowl (trust me, you’re going to want a lot!) with some cheese and tortilla chips on the side! This is SO YUMMY.
We like to make tortilla pizza because they are super simple and healthier for you than a normal pizza. They are super easy, and you can customize them however you’d like! Here’s what you’ll need for a basic cheese pizza.
- Flour Tortilla
- Pizza Sauce
- Mozzerella Cheese
- Olive Oil
In a pan, heat up some olive oil and brown your tortilla until it is golden brown. I flip mine often so it doesn’t burn! Once you’ve browned your tortillas, put them on a foil lined baking sheet. Add your sauce, cheese and toppings. Bake in the oven at 425 for 3-5 minutes, then enjoy! Super crispy, thin “crust” pizza that tastes so yummy!
My dad has been making these enchiladas for years, and they are our favorite! Here’s what you’ll need.
- Flour Tortillas (we use the burrito size)
- Enchilada Sauce (We like La Victoria)
- 1 lb Jenny-O Taco Seasoned Ground Turkey (This one is already seasoned for you! However, you can use beef too if that’s what you have in your home!)
- 1 Can Refried Beans
- 2 lbs Cheese (You can use whatever kind you like! We usually use cheddar jack!)
Brown turkey, do not drain. (If you are using beef, brown/drain/cook with seasoning!) Add refried beans and heat and stir until incorporated. “Paint” each side the tortilla shell with enchilada sauce. Add 2-3T of meat and bean mixture. Add a sprinkle of cheese and roll up. Next, add a small amount of enchilada sauce to the bottom of a baking pan. As you finish each enchilada arrange in a single layer in baking pan. (I use 1 13×9 pan and 1 8×8 pan!) When the pan(s) is full, cover enchiladas with enchilada sauce. Top with more cheese! Bake at 350 for 15-20 minutes until cheese is bubbly! We serve with lettuce and sour cream 🙂 These are so yummy, you will love them!
Sausage and Veggies
I’ve shared this recipe on my blog before, but this is one of my absolute favorite quick and healthy recipes! Here’s what you’ll need.
- Turkey Sausage (I like this one.)
- Peppers (We usually use one yellow and one orange!)
- 1 Sweet Onion
- Your Favorite Kind of Potatoes (I like the Boomer Golds from The Little Potato Company!)
- Extra Virgin Olive Oil (EVOO) and Your Favorite Seasonings! We use Onion Powder, Garlic Powder, Italian Seasoning, Salt and Pepper to taste.
I’m so sorry I can’t really give you exact amounts on ingredients. I literally don’t use measurements. I just like throw everything in a bowl until it looks good! Start by chopping up your veggies and sausage and put into a large bowl. Once all chopped up, toss in EVOO and seasonings. Then, dump onto a cookie sheet. Roast your sausage and veggies at 450 degrees for about 15 minutes, then flip and roast for 15 more. (Check your potatoes to make sure they are cooked all the way!) Then, divide them into containers and store in the refrigerator. And BOOM! You’ve got a delicious, healthy meal.
It’s no secret that I love Mix and Match Mama! I’ve made tons of her recipes and ever single one is a hit. However, this one is one of our all time favorites! We’ve modified the recipe a bit over the years. Here is what you’ll need…
- 1 lbs Ground Beef
- 1/2 Cup Panko Chips
- 1 Cup Cheddar Cheese
- 2 Eggs
- 1 Onion Finely Chopped
- Salt and Pepper to Taste
Mix ground beef, breadcrumbs, cheese, eggs, onion, S&P in a bowl. Form into meatballs (I made 9 of them) and line them up on a foil lined baking sheet lightly sprayed with Pam. Now, you need to add some sauce to the top! Sometimes we mix up ketchup and mustard and dollop it on top. But a lot of times, we mix up an In N Out copy cat sauce! (See photo below for how we make it.) Bake at 425 for 15-20 minutes, or until they are browned and baked through!
We like to serve these with tatertots or french fries and lemonade! They taste like summer 🙂
